I am getting frustrated with bread baking lately. Over the last week I have used yeast from the same jar 4 times. The first and second times, the yeast activated perfectly. The third time the yeast would not do anything at all, and then the last time, it activated really well. I can't tell why the yeast behaves so inconsistently. I have kept all of the other variables the same or as close to the same as possible.
